Moscardini De Pesach

1 1/2 cup coarsely ground, roasted almonds
1 cup sugar
1 pinch salt
1/4 cup unsweetened cocoa
1 matzo meal
1 grated rind of orange
1/2 teaspoon almond extract
1 egg, lightly beaten
1 egg yolk, lightly beaten
Preheat oven to 350'F. Combine almonds, sugar, salt, cocoa, 1 cup matzo meal, orange rind, almonds extract, egg and egg yolk in a small bowl.
Drop dough by rounded teaspoonfuls on oiled baking sheet dusted with matzo meal. Shape each cookie into a oval, flatten with bakc of fork.
Bake for 10 minutes. Cool on rack.
Makes 2-1/2 dozen 3" cookies.
